Turmeric Scrambled Eggs with Spinach & Ghee

Give your simple scrambled eggs a twist with the healthy addition of Spinach and ghee!

Ingredients

    4 Eggs

    ½ cup soy milk (Or whichever milk you prefer)

    1 tbsp ghee
  • Image
    ½ cup sliced onion
  • Image
    ½ tsp turmeric powder
  • Image
    ¼ tsp cumin powder
  • Image
    ¼ tsp cumin powder
  • Image
    2 cups / handfuls of baby spinach leaves
  • Image
    Pinch of salt / pepper

Method

  • Image
    Begin with rinsing the spinach leaves so that there is no grit left in them.
  • Image
    Whisk the eggs and milk together in a bowl with a pinch of salt and pepper.
  • Image
    Heat the ghee in a large frying pan, add the sliced onions, turmeric and cumin powder and cook until the onions are soft.
  • Image
    Add in the spinach leaves and cook until the leaves are wilted.
  • Image
    Push the spinach and onions to one side and pour the eggs in.
  • Image
    Leave the eggs to settle on the bottom and then scramble them by stirring every now and then.
  • Image
    Once they are nearly cooked through and firming up, stir the spinach and onions in.

    Serve up piping hot.
