Carrot and Cumin Soup

A lusciously spiced carrot soup, made creamy by the addition of natural yogurt!

Ingredients

    2 tbsp olive oil

    1 onion, chopped
  • Image
    2 tsp cumin seeds
  • Image
    800g carrots, roughly chopped
  • Image
    1 litre veg stock
  • Image
    200 ml natural yoghurt
  • Image
    Salt & Pepper
  • Image
    1 tbsp harissa

Method

  • Image
    Heat the oil and gently cook the onion for 5 mins.
  • Image
    Add the cumin seeds and the carrots and cook for 2 mins, stirring.
  • Image
    Add the stock and simmer for 25 mins until the carrots are tender.
  • Image
    Cool slightly and then blend until smooth.
  • Image
    Return to the pan, and stir in 4 tbsp of the yogurt. Check the seasoning.

    Stir the harissa into the rest of the yogurt and serve the soup with a dollop of the spicy yogurt on top.
