Almond Pulp

Energy bites are little nuggets of nuts, seeds, dried fruit, coconut, or spices, which means that your leftover almond pulp will fit right in with the crowd. Fold your almond pulp into the mix the next time you make no-bake balls, squares or bites.

Ingredients

    3/4-1 cup almond pulp ( ground almonds )

    1 cup (160-180g) soft dates
  • Image
    2 tbsp almond butter (or any nut butter you prefer)
  • Image
    1/4 tsp salt
  • Image
    1/2 tsp vanilla paste (or 1 tsp vanilla extract)
  • Image
    1/4 cup (4 tbsp) walnuts or other type of nut
  • Image
    1/4 cup (4 tbsp) cacao nibs or chocolate chips

Method

    Blend together the almond pulp and dates.
  • Image
    Add the almond butter, salt and vanilla. Continue blending until you have a smooth sticky mixture.

    Add the walnuts and cacao nibs. Give a quick whiz to make sure everything is equally distributed.

    Shape into golf size balls.
  • Image
    You can enjoy them as they are or coat them in things like shredded coconut, cinnamon or ground up nuts for extra flavor and texture.
